I have sélected "large - medium - small airport"

Second question : can I hide my airplane in the map ?

Switch to Hybrid or Satellite views and you will see the runway and apron. You can turn off the user aircraft in the Simconnect tab of the Options dialog.

When I "clic" on the "globe" then "options" and make "display user aircraft" my airplane in yellow stopped, but I see my plane in red continuing the flight  ???

Make sure you have the 'Filter' option ticked in the AI part - that should prevent the user plane showing as AI.

Were you in multiplayer or just single user? The Traffic expander on the right should hold details of all the aircraft displayed.

It's possible that something broke while fixing some multiplayer issues - I'll investigate later. But right now it's a nice sunny afternoon, and I'm off to the airfield to see if I can go flying...  ;D
